So I've just walked for the last hour and 20 minutes in part because the little one fell asleep on me and the peace and quiet was just too nice to interrupt. It wasn't until some asshole in a loud car sped by that she woke up so we ended our walk. I am a city girl true and true but I hate loud cars, and loud barky dogs. SHUT UP!!!!!!!!!!!!!!!!!
Here's the peanut sauce recipe from the other night. In a food processor combine 3 TBS of peanut butter, 1/4 cup of water, minced garlic, thai garlic chile sauce to your heat preference, 2 TBS of rice wine vinegar, a drizzle of honey (to minimize calories), 1 TBS of soy sauce (which equates to roughly 2 take-out packages in case this is one of those annoying items you keep forgetting to replace, 1/4 cup of diced tomatoes, 2 teas of grated fresh ginger, parsley or cilantro (fresh or dried) and 2 Teas of fresh lemon juice.
Puree til smooth. Serve chilled. Makes about 1/2 cup which can be stored in the frig and used multiple times. I only use about an ounce at a time again to minimize calories. It's very tasty.
I am making a shrimp and scallop saute tonight. Not sure what the recipe will be but will post it later.
I was worried about lunch today. A friend and her kids came over for a playdate. I was in charge of our activity (decorating our christmas tree for the birds and squirrels) and she was bringing lunch. I didn't know how to not eat what she brought but luckily she brought a greek salad. She's dieting too. I think people are annoyed when you don't eat what they cook or bring to you.
I have an invitation to my favorite pasta place-Mangia Italiano-tomorrow night. Another girlfriend is in town. Again this would not be my choice for Sat. night but I need to go. I'd rather save all of Saturday's calories for drinks!
Oh I am also struggling with when to weigh. I'm thinking about waiting a week not a day before to maximize the loss. Morning, noon or night?
